I love breakfast on the weekends, all you need is an idea, and a little creativity!
Here are my top five favorite easy breakfast ideas that you can make any weekend!
Number Five: Yogurt Parfait!
I absolutely love yogurt parfait. I even make it for a school morning (before the pandemic) and it’s great for a day where you want a light, fast, and delicious breakfast!
Ingredients!
- 1 Container of yogurt
- Granola
- Berries or Fruit (Some examples are strawberries, blueberries, black berries, raspberries)
Steps!
- Spoon the yogurt into a glass or bowl
- Spoon some granola on top of the yogurt
- Cut up the berries or fruit if needed and place on top
- Enjoy!
Number Four: Smoothie!
Smoothies are filling and a great breakfast option. There are several ways to make them, and here I have two recipes!
Recipe One –
Ingredients!
- 1/2 Cup of milk
- 1/2 Cup of yogurt (A little over 1/4 container)
- Frozen Fruit (I used frozen cherries)
- 1 Banana (Optional)
- 1 Handful of Spinach (Optional)
Steps!
- Put milk, yogurt, fruit and other ingredients into the blender.
- Secure blender and lid
- When the mix is smooth, pour into large glass
- Enjoy!
Recipe Two –
This one is much more simple and if made with specific ingredients, can be vegan.
- Frozen fruit
- Milk, fruit or vegetable juice, or water
Steps!
- Pour Frozen fruit and liquid substance into blender
- Blend until smooth
- Pour into large glass
Number Three: Egg Over-Easy!
I love eggs, they’re delicious and are some of my favorite breakfast foods ever. Eggs over-easy are delicious, and after figuring them out, they can be a simple and easy dish for any breakfast.
Ingredients!
- 1 Large Egg
- Cooking spray
- Bacon or any meat you like with your egg (optional)
- Garnish and seasoning (Optional)
Steps –
- Put the stove up to a medium heat, with a pan on top, spay with cooking spray.
- Crack egg and without mixing, let it carefully fall onto the heated pan.
- When ready, flip the egg onto the other side, making sure not to break the yolk.
- When cooked, place egg on plate and garnish with salt and pepper etc. (If you want.
- Enjoy!
Number Two: Pancakes from Scratch!
I LOVE PANCAKES. I think most people do. So here I’m going to list a recipe, however, this recipe is not mine. I originally learned this recipe from a food science class in my school, so my credit goes to my food science teacher!
Ingredients!
- 1 Cup of all-purpose flour (spooned and leveled)
- 2 Tablespoons of sugar
- 2 Teaspoons of baking powder
- 1/2 Teaspoon of salt
- 1 Cup of milk
- 1 Tablespoon of vegetable oil
(If you’d like you can add chocolate chips or blueberries or whatever add in and make something new, this is a base. You can also top with various extras, such as berries, whipped cream, butter, maple syrup, jam, chocolate syrup etc.)
Steps!
- In a small bowl, whisk your dry ingredients (baking powder, flour sugar, salt), and set aside – Tip: in order not to activate the yeast in the baking powder when mixing this, and when adding into the wet mixture, be sure not to over mix. This will give you a fluffier and less chewy pancake.
- Mix together milk and oil in a medium sized bowl. Add dry ingredients to the liquid mixture. DO NOT over mix – it doesn’t need to be completely smooth.
- Heat the stove or griddle to medium heat, if using the stove, put pan on top. Spray or rub with cooking spray/oil.
- Spoon mix (2-3 tablespoons) and let sit for around 1-2 minutes or until the air bubbles have popped, and flip with flat spatula.
- Continue until all batter is used.

Number One: Avocado Toast!
I know not everyone will feel the same, but I freaking LOVE avocado toast. I have an obsession with it, and I feel incredibly sorry for those who can’t eat it. I am aware not everyone feels the same about avocado toast as I do, but I am all in for it. Note: Keep in mind, you don’t have to follow the recipe and can go for the base, or use the base and top it how you want.
My favorite avocado toast recipe! (Some ingredients say optional and if you choose not to use them you will have a base)
Ingredients!
- Avocado (sliced)
- Bread
- Block of parmesan (Grated) (Optional)
- Bit of garnish/seasoning for flavor – I used a sprinkle of garlic powder, paprika, and chilli flakes (call me strange). (Optional)
- Sun-dried tomatoes (Optional)
Steps!
- Toast bread
- Take sliced avocado and place, slightly overlapped on the toast. (If you’d prefer however, you can smash into more of a paste and spread).
- Sprinkle seasoning and parmesan on, and add sun-dried tomatoes.
- ENJOY!
