My birthday was earlier this year (please no “happy birthdays”, it was a while ago, but thank you). It just so happened to be one of the first days the self-quarantine started where I live (I was pretty annoyed but oh well, what can you do). Despite losing the opportunity to spend time with my friends and celebrate a normal birthday, there was a ray of light at the end of the dark tunnel. My dad. Well… My dad and his amazing baking abilities. No joke, he is an absolutely incredible baker, and makes my, and my mom’s cakes each year. (My brother doesn’t like cake, so my mom gets chocolate chip cookie cake; or my mom and I make one with her killer cookie recipe). This specific year, I decided on a lemon blueberry cheesecake, and it was DELICIOUS. (Recipe link at the end as usual). Lemon, blueberry, and cheesecake: the ultimate combination!
The idea was based on this ice cream sandwich I’d loved, and because I’m lazy, I found this amazing recipe by “Life Love and Sugar.” Check out this recipe, and their many others!
When I tried it, my thought process was simple. Just about as many “yum’s,” and “yes’s,” as you can imagine. I genuinely just enjoyed it. It was just the right creaminess, lightness, but also denseness (in a good way) for a cheesecake to be.
And can we talk about how REFRESHING it was. It was so nicely balanced, citrusy, and refreshing. Citrus is a flavor that when put to good use, is the superior weapon of choice. And I’d never really thought of blueberry going with it, but heck, it’s amazing.
