Easy Egg Scramble With Vegan Alternative

  • 2 Eggs
  • 4 Tablespoons of Cheese (Your Choice)
  • A Handful of Spinach
  • Cut Baby Bella Mushrooms
  • Diced Bell Pepper
  • Diced Sun Dried Tomatoes
  • Avocado To Top
  • Salt and Pepper To Taste
  1. Spray pan with cooking spray and put stove to medium-low.
  2. While the pan heats, dice, cut, and wash ingredients if needed.
  3. With a fork, quickly whisk eggs in a small bowl.
  4. Add eggs, spinach, mushrooms, bell pepper, and sun died tomatoes to the pan.
  5. Scramble and add salt, pepper add cheese.
  6. Plate and top with sliced avocado.
  7. Enjoy!
