This is going to be a quick and simple introduction, because if you read these there’s a chance you might be in this situation right now. (Maybe you’re not going out the door but maybe getting ready for a zoom)
We all have those nights where you need to eat something but are rushing out the door from one thing to the next. Or maybe it’s already 8:00 and you have that 4 page essay that you haven’t started sitting in your bag. Don’t worry, I got you! Here are some quick and delicious recipes anyone can make!

Grilled Ham and Cheese Pita (10 Minutes)
This recipe is faster than a normal grilled cheese because pitas are thinner. This is a great quick recipe!
Ingredients:
- 1 Pita
- 1/2 Tbsp Butter
- 2 Slices of Sandwich Cheese
- 1 Slice of Ham
- Avocado (optional)
Steps:
- Put your pan on the stove and put on medium/medium-low heat
- Place butter on while it’s heating up and allow to melt
- While butter is melting, put the cheese inside the pita on one side, and the ham in between the cheese and the pita.
- When the pan is heated, place down pita down on the pan.
- Flip
- Place on plate and on the side without the cheese, put avocado (if chosen to use) or any other toppings in the pita.
- Enjoy!
Mug Mac and Cheese (5ish Minutes)
- Water (Obviously)
- Pasta (uncooked)
- 3 Tbsp of Shredded Cheddar Cheese
- 1.5 Tbsp Milk
- 1/3 Tbsp Butter (Unsalted)
- Pinch of Salt
- In a mug, put pasta and put enough water to pretty much completely cover the pasta.
- Add a pinch of salt
- Microwave on high for 2-3 minutes or until cooked
- Mix in butter, milk, and cheese.
- Microwave for 1 minute.
- Mix, and enjoy!
Rice Bowl + Toppings (5-15 Minutes)
This works best if you have some rice prepared ahead of time. But, you can quickly make a single serving size of rice in a pot or pan. Brown rice, white rice, even quinoa or a mix work.
- 1 serving of rice
- 1 tsp of sesame seeds or furikake rice topping
- Toppings of your choice
- Put the rice in a bowl
- Add rice topping and any garnish
- Add toppings
Topping Ideas:
- Smoked salmon, avocado, carrots
- Veggie mix (peas, carrots, snap peas, corn, etc)
- Canned or grilled tuna and broccoli
- Pineapple, peppers, and chicken
- Mushrooms, tofu, spinach, and onion
